Description: Beet red, also called beet red, by the consumption of red beet root (commonly known as red beet) in China for making the natural red pigment, mainly composed of red beet cyanine and yellow beet flavin (except pigment is compatible with sugar, salt and protein, etc.). Beet red finished for purple powder. Soluble in water, slightly soluble in ethanol, insoluble in ethanol. Aqueous solution is red to purple, in alkaline conditions are yellow. Good dyeability and poor heat resistance .
Effect: Colorants ,Poor heat resistance, should not be used for high temperature processing of food, are best used in icecream ,etc. Stability decreased with increasing water activity of food, so does not apply to soda or juice. Used in infant food coloring, must strictly control the nitrate content.
